Menu Plan Monday ~ April 4 (Working with what I got)
My freezer is full and my pantry is well stocked. There is no reason not to be able to plan a decent menu for this week, and for most of next week. But lets just worry about this week for now.
Monday: Chicken Breasts on the grill (marinated in Italian dressing) grilled zucchini
Tuesday: Spaghetti Casserole with salad
Wednesday: Grilled Cod ( I have two bags of frozen fish) brown rice, broccoli
Thursday: Bacon, Eggs and Grits ( We love breakfast for dinner)
Friday: Pot Roast in the Crock Pot. Easy, Easy, and by the time Friday gets here, I am over cooking.
A very Simple Menu, that should keep me out of the store for awhile. Okay, at least a week. I am going to try to keep my grocery budget at 500 dollars this month. We shall see.....

The menu sounds delicious! We are already over our food budget for the month...we are having 10 out of town visitors and a huge party on Saturday. I needed to plan dinners for four nights for over 12 people, then I'm having 50 people for the party. Whew. I'll try and scrimp for the rest of the month! :)!
I LOVE freezer & pantry meals! We often rely on those too!! I love seeing how creative people can get just using what they have! your menu sounds great!! I remember I had a friend in college who grilled chicken ALL the time that was marinated in italian dressing - it was a staple for her and her husband! :-)

You reminded me of one of my favorite meals! Italian Chicken! You should try balsamic vinegar marinated chicken. 2 parts evoo to 1 part balsamic. SO GOOD!
