During my mom's post brain surgery recovery, we have been blessed by her church family. They have
signed up to bring our family meals and the variety of tasty food has been absolutely wonderful.
For the most part, there has been little or no food waste with these wonderful meals. The casserole below was very tasty. It is a salmon noodle casserole and what makes it extra special, the couple that brought it over actually caught the salmon in Alaska.
Somehow, this dish got pushed back into never-never land of our fridge. That is too bad, because it really was good.
Low and behold, there was another sleeper in the left over department. The remnants of a homemade coleslaw.
Overall, it was a pretty good week! How was your week?

I've had no food waste so far this week. I plan to make soup tomorrow to use up some tired limp looking vegetables. It only makes sense that with all the food the church family is bringing that there'd be a bit of waste. either that or you're going to gain 10 pounds trying to eat it all!
I am amazed at how well I'm doing grocery expense-wise because I'm watching my food waste. I never realized how much of the food I bought was wasted. Now we are using everything...and if I don't think I'm going to use leftovers, I freeze it immediately. Right now I'm enjoying a slice of an egg/sausage casserole I made that we didn't use up for dinner one night. I froze it in individual servings and it's worked out great!
Personally I've had almost no food waste this week. Mainly pasta for the whole week and I haven't over cooked more than 1 night.
That is awesome Juan! It is great to be able to not have to throw away food.
It is funny how careful one becomes when you have to document the food waste. Sure makes you think more about what you do with leftovers..... or the potatoes that hid in the pantry :)
Oh... yeah the 10lb weight loss challenge is definitely a CHALLENGE with all the great food that the church is bringing!
That salmon casserole sounds good (before it went bad.) I may look up a recipe. You're doing a great job with your waste especially with everything else you have to think about.
I hate when my coleslaw goes bad. I just can't eat the darn thing so quickly. Wish they would freeze better. I didnt need the closeup, but thanks for considering. Funny, because the last food waste I've had in these past 3 weeks was half a bag of chopped coleslaw ingredients... I was sad.
