Works For Me Wednesday: Red Velvet Cookies

 I have some free time during day and since things have been more manageable around the house with my dad.  To keep me busy I have dug up one of my favorite recipes.  These red velvet cookies are easy and inexpensive to make.  When finished, they also make a great Christmas gift for friends and family. I borrowed the recipe from  Bakerella. She  had posted an easy recipe for these tasty treats a while back and I have been a fan ever since.

So.. I gathered my ingredients together... One red velvet cake mix, one stick of room temp butter and two eggs. Yep.. that is it. Three ingredients... this could not be any easier!!


The three ingredients are put into my handy dandy mixing bowl.....

Now... my little handheld mixer is practically an antique! ( A lovely shade of harvest gold circa late 70's) I have had this little gem for 29 years! It is from Sears and I have used it, and used it... and it just keeps on mixing! Bless it heart... this batter almost did it in. The batter is extremely thick... but the might mixer did the job!



To ensure almost uniform cookie size, I used a 1/2 teaspoon measuring spoon to scoop the batter onto the greased cookie sheet.



Here are the first dozen ready to go in the oven for 10 minutes at 350 degrees.


Ahhh... here are the first dozen cooling off. They are such a pretty deep red, don't you think?


After cooling for a few minutes.... I put them in a zip lockbag so I can frost them later... probably tomorrow.


But.... I wanted to show you the finished cookie.. topped with cream cheese frosting!



Oh yes..... they are definitely delicious!

Look delish! It is a pitty that I recognised only the eggs - we don't seem to have the rest here in the UK. Well, one more reason to visit the US properly (I mean not for work).

Ha! Lose look DANGEROUS. Pretty impressed with the simplicity of the recipe though. I'm pretty much a "bake from a box" guy, so I might be able to handle this one...
