Food Waste Friday and a Left-Over
Oh, how I love the accountability that comes with "Food Waste Friday". This week was better for me in the fresh food division. Not perfect, but definitely better. The bananas from last week found their way into a loaf of banana bread. I love it when you can re-purpose before you have to throw it out.
This week there is another almost "food waste" vegetable. It is the zucchini. Why I did not use this pack of zucchini sooner I couldn't tell you.. But I think there are parts of the zucchini that are salvageable and can be turned into zucchini bread.
Now on to the "left-over".......
I also found this left-over storage container of beef stew. My mom had sent it over after my knee surgery last week. It was the best, and we certainly did not waste too much of it. Meals are ALWAYS better when they are made by your mom....

Great idea for the bananas. This is very cool that you are challenging yourself to not waste food.
Mmm... Love zucchini bread! You can shred & freeze it as well.. Save it for baking later! Overall you did great! :)
I see a trend. Banana bread last week and zucchini bread this week. I think you really like making breads and are waiting for the ingredients to get old enough. :) I made banana bread last week with ripe bananas and put chocolate chips in it. Boy, was it good.
The bananas always suck me in when I go to the grocery store.

We are certainly trying to not be so wasteful. Worse case is that the spoiled fruits and veggies will end up in the compost bin.
