This is really easy and the end result is a cookie that is light, chewy and delicious!!
INGREDIENTS:
* 1 box lemon cake mix (the non-pudding kind)
* 1 egg, beaten
* 8 ounce container whipped topping (Cool Whip*)
* 1 Tbs. lemon juice
* Powdered sugar
PREPARATION:
Preheat oven to 350 degrees. Lightly grease cookie sheet. Gently mix. Drop by teaspoon in powder sugar and roll into ball. Bake for about 10 minutes. Do not overbake. Cool and store in tightly covered tin or plastic container. Makes a chewy cookie.
Since many cookies must be tested immediately following the baking, it is impossible to say with any accuracy how many cookies this recipe makes but I would estimate about 3 doz.
This is a quick and inexpensive dessert. The cake mix was BOGO, and the other items I already had on hand. Next I am going to try the white cake mix with sprinkles in it! Those are suppose to be really good too!

These look mighty interesting. I don't think I have seen any cake mixes lately that DON'T have pudding in them though.

Your cake mix cookie recipe is a bit different from mine, but it sure does sound good! I'm the one in the family who would end up eating the lemon cookies. Love 'em!
