Menu Plan Monday~ June 17,2013

We are adjusting to our normal schedule again.  The first two weeks of this month were crazy and busy.  We did not eat at home much if at all.  It was all on the go meals that included a lot of drive thru cuisine.  Not that healthy, but it got us through.

When mom passed, we were blessed with several home cooked meals from friends.  They were tasty and helped us through the difficult time when cooking is the last thing on your mind.

Now, or at least for today we will start out with a menu plan.  We may not stick to it exactly, but we will surely try our best.

Sunday: Crock Pot Chicken and Dumplings.  This is THE BEST and EASIEST MEAL ever!  I found it when I was looking for some ideas for freeze ahead crock pot meals.  You must try it.  Great comfort food.

 Monday:  leftover Crock Pot Chicken and Dumplings.  I have to work a 12 hr day and will be taking this for my dinner.  My husband will also be eating it again for dinner.

Tuesday:  Lasagna Roll Ups   This with a salad will be a perfect meal.

Wednesday:  Pork Chops on the Grill, Grilled zucchini and brown rice.

Thursday:  Breakfast for Dinner.  Eggs, Grits, and Bacon.

Friday:  Rotisserie Crock Pot Chicken  A favorite from way back.

Saturday:  Baked Tilapia, Yellow Rice, Broccoli.

For our weekly lunches, there is not much deviation.  Husband takes a sandwich, two boiled eggs, chips, apple and cookies. I usually take a peanut butter and jelly on toast, apple, and peanuts to eat as a snack.

We need to get on a menu plan for the week. I think it would really help our family stay on track with everything. Having to make sure food is prepared for two teenage boys and a newborn is a lot of work.

MMMM...reading this makes me hungry. Great meal ideas. We have gotten in the habit of cooking our meals on the weekends and freezing them for later. Saves a lot of money and cuts down on eating out

I do the same thing (though even on weekdays). And yes I get to save a lot of money because of that.
