Menu Plan Monday July 8,2013 Weight Watcher Edition

We need to get back on track with our menu planning and eating better.  My husband and I are both overweight so we have decided to get with it and join Weight Watchers.   The last two years have been filled with family drama and stress.  Losing both my parents in the last 6 months has definitely increased my stress and I handle stress by eating junk food.

via

Now we are counting points and adding exercise to our routine.  This weekend I have been online searching out easy and tasty Weight Watcher oriented recipes.  Here are a few that we will be using this week:

Monday:   Sweet Potato Cauliflower Soup   This recipe looks easy and is a great way to get vegetables in our diet.

Tuesday:  Skinny Meatloaf

Wednesday:  Skinny Chicken Pot Pie     We love chicken pot pie, and this recipe is only 7 points per serving.

Thursday:  Pizza Logs   Great for when you are craving pizza!

Friday:  Cheesy Chicken and Rice Casserole   Total comfort food.

Each meal is accompanied by a green salad and or fruit.

What is on your menu for the week?

Check out my ebay sales for last week!

Menu Plan Monday December 10, 2012

Nothing like a last minute menu plan! There will be grocery shopping this week but it will be more for milk, bread and such. A couple of weeks ago I had made several portions of chili and spaghetti sauce to freeze for future use.

Last week was hectic and crazy and we ate out a lot! Hoping things are settling down this week, but we have. Learned to take things one day at a time.

Menu Plan Monday Nov 12, 2012

The weekend was uneventful and that is a good thing. Time to get back to our normal and enjoy each day to it's fullest. Getting a grip on the menu planning always helps keep me on track and out of the drive thru!

Monday: Slow cooker beef stew, cornbread (time to get out the crock pot liners)
Tuesday: Grilled Pork Chops, Grilled zucchini ( this seems to be a weekly favorite..)
Wednesday: Baked spaghetti, tossed salad
Thursday: Grilled Cheese, Tomato Soup
Friday: Eggs, Sausage,Grits and Toast. (comfort food :)

The leftovers from the beef stew and baked spaghetti will sent with my husband for his lunches. This is an easy menu, many items are on hand and of course it is simple and easy. I like easy.

Menu Plan Monday October 22, 2012

Happy Monday! This is a quickie post to keep myself on track with meal planning and budgeting. Planning a weekly menu does help, I just have to find time to get it done.

Before my first patient, I had enough time to put together a menu that will work for us.

See what I sold on eBay last week
Have a great Monday!

Menu Plan Monday ~ Jan 2

My easy split pea soup
Time to start the New Year out right with some proper menu planning.  My mom helped with the menu this week.  She was craving a few things that the hospital did not have.  In the hospital's favor, mom raved about the food that they did serve her, she just had a desire for some of her own cooking.

Monday:  Chili  and cornbread ( It is getting a little chilly in Central Florida this week!  In the mid 30's tonight!)

Tuesday:  Baked chicken breasts with Panko crumbs

Wednesday:  Sukiyaki    with rice (one of mom's favorites)

Thursday:  Eating Out.  A local seafood restaurant has a half-priced menu on Thursdays.  We are there!

Friday:   Slow Cooker Lasagna  (borrowed from the Duggar Family Favorite Recipes)       I will be using my crock pot liners for this recipe!

Saturday:  Split Pea soup in the crock pot

Sunday:  Chicken and dumplings.

Are you incorporating menu planning into your schedule this year?

Menu Plan Monday ~ Oct 24

Getting back in the groove has proven to be cost effective.   Last week I did start or I should say re-start my menu planning.  It was a definite money saver.  No surprise there to those of you who do plan your menus.  As I planned this week's menu, I did notice that the menu was a little heavy on the pork.  Hmmm......
Oh well, we are going with it!   The weather here (Central Florida) has become a bit cooler so all of these dinners sound really good.  (Maybe menu planning should not be done on an empty stomach)

Monday:  Ham and Potato Soup

Tuesday:  Baked Spaghetti, Tossed Salad

Wednesday:  Eggs, Bacon and Grits

Thursday:  Pork Chops, Baked Sweet Potatoes, Whole Wheat Biscuits, Tossed Salad

Friday:  Grilled Cheese, Tomato Soup (Easy!!)

Saturday:  Homemade Lasagna (birthday dinner for a friend)

Sunday:  Leftovers from Saturday

I am such a creature of habit, comfort comes with familiarity.  This week, I am stretching beyond my comfort zone a bit.  I found three new recipes I am going to try.  Thursday's Creamy Potato Soup looks delish, and even though it has a few more ingredients than I typically use, I am going to give it go.  You never know until you try.

Monday:  Cabbage Soup

Tuesday:  Slow Cooker Lasagna  (borrowed from the Duggar Family Favorite Recipes)

Wednesday:  Grilled Pork Chops, Grilled Zucchini

Thursday:  Creamy Slow Cooker Cheesy Potato Soup  (a lot of ingredients, but I am going to try it)

Friday:  Grilled Hot Dogs, Baked Sweet Potato Fries

Saturday:  Gift Cards for dinner ( Red Lobster)

Sunday:  Tuna Fish and Noodle Casserole (comfort food)
